Breakfast: Vegetable Omelette Muffins with Greek Yogurt and Fruit
Directions:
1. Chop up any vegetables or meat you want into very small pieces (I chose a vegetarian omelette with onion, peppers and spinach).
2. Wisk 4 eggs with 12 egg whites together, any spices you'd like and then add the chopped ingredients to the mixture.
3. Spray muffin tray with pam, olive oil spray or any other kind of non-stick spray.
4. Evenly scoop approximately 1/3 cup of mixture into each muffin tray.
5. Add cheese on top (optional) and I added some bread crumbs for fun (also optional).
6. Cook on 350 for 30 mins or until the 'muffins' rise/become golden on top.
7. Enjoy!
Ingredients: each serving ~ 49 calories!
I highly recommend trying this recipe! Came out so well and it was my first time making something like this. They are great over toast and can also be made in advance for breakfasts all week.
