This is a great snack or side dish to have when you feel like something crispy but don't want to turn to chips.
Directions
1. Cut up eggplant(s) into thin, even slices.
2 Lay them out on a tray, add spices of your choice, olive oil, Parmesan and some salt and pepper (optional).
3. Bake in the oven for about 30 mins, flipping them halfway through.
4. Enjoy! :)
I never used to like eggplant but making them this way has changed my mind. This is the closest thing to tempura that I can think of that will yield a healthy result.
