Lunch: Avocado, Arugula Salad and Chicken Sandwich
In my opinion, this is the perfect sandwich! Easy to make and full of healthy things for you.
Avocado: I love it on just about everything but I didn't realize how good it would taste with tzatziki and chicken. Avocado has good fats, easily absorbable protein and is a very healthy alternative to meat (can add double the avocado and skip the chicken!)
Tzatziki: I find sauces are a tricky part of dieting but tzatziki is pretty good for you. It can even be homemade in bulk by blending plain greek yogurt with cucumeber shavings and finely chopped fresh dil and a touch of olive oill to avoid the sour cream.. (But that will be a different recipe in time!)
Arugula: No fault greens. So low in calories and pretty tasty mixed as a salad or in a sandwich.
Chicken Breast: There are many kinds of cold cuts you can buy but one of my favorite, low-calorie brands is Piller's Chicken Breast.
